Sustainable dairy replacing food structures

This project will enable development of sustainable dairy alternatives that meet consumer preferences by identifying and addressing current barriers. Achieving this requires redefining the state of the art and building an understanding spanning across technical aspects of dairy substitutes' structure and their human perception, leading to the creation of highly desirable products with significantly reduced climate impact.
